Colin Campbell in SA!!
I have been in touch with Dr Colin Campbell and speaking to him for nearly 3 years now about conducting a seminar for us here in South Africa. AND....

Dr Colin Campbell is Professor Emeritus at Cornell University in the state of New York and the man who headed the China Study and also the author of the New York Times best seller of the book, The China Study.

Course info
To all students - it appears an email was sent last year saying that you have a year to complete the old course. This is not the case, all students have 10 years from date of payment to complete the course. Please just email the academy at info@intacdemynaturalhealth.com to check the marking fee at the time you are ready to submit.

I cant thank you enough for what you have put into this programme. You are a great blessing.
I bought your 1st book about 20 years ago or so. I think it was newly out then.
I read it and believed every word you said, but I was not at that place in my life where I had the will to execute your plans.
I SO regret that, for my children as well as for my husband and myself.
BUT........God is good, because 13 months ago He just gave me the divine ability to do a 360 degrees with my life and get on track for the very first time in my 58 years.
I have Muscular Dystrophy (Limb Girdle type), plus I had breast cancer in 2004 and my gall bladder removed in 2005. I have been in a wheelchair since 1996.
Well, I have to confess my life became a mess in almost every way.
But on the 31st January 2009 in the midst of experiencing the MOST unbelievable pressure sores from sitting, I just cried out to God and HE began to do a work in my heart and mind. I have never been so serious with God in my life and He knew it too.
I was weighing around 130-140kgs!!! I used to eat my way through stress. Not really in quantity, but in WHAT I ate!!
I just got this divine idea to eliminate flour, dairy, sugar.
So I began to eat a lot of raw fruit and veg with a small bit of complex carbs like potato and rice milk to replace dairy.
I went to find your book but I think it's either packed away or I have lent it to someone with whom I have lost track. So I'm planning on getting another one soon. In the mean time I decided to find you on the internet and thats when I saw your 100 day programme. It is amazing. I realised for the first time that eating correctly is not about following a diet, which sets one up for failure anyway, but it's about understanding how to go about eating foods. Suddenly I have so much understanding about correct eating. It's as though the entire puzzle has begun to fit together for me!
I still have to ask God each day to renew my strength and give me the ability to remain true to what I'm doing. And, He DOES!!!
Now my husband is also following my "eating with understanding" and has lost 7kgs!
Thank you so very much for having inspired me again from all those years back. When I bought your book I KNEW it was for a purpose. But sometimes us humans take too long to learn!!

P.S. I almost forgot to tell you that I am down to 85kgs now (about 45kgs lost - just not too sure as its almost impossible for me to stand on a scale!!) 
Imagine how much I would have lost had I been able to exercise like other people can?
 
 
 
Recently been enjoying an interesting combination
Red Pepper mayonaise with Bean dip, served with salad and grilled polenta slices

These two meal "add-ons" are not only delicious but extremely nutritious

Red Pepper mayonaise
is an excellent source of beta carotene and essential fatty acids, vitamin C, calcium and fibre

2 Red peppers cleaned and cut into largish pieces and either grilled or simmer gently in a pot with a lid over low temperature. Add NO water or oil - the natural juices just come out.

juice of 1 medium lemon
1-2 tsp Mary-Anns Garlic & Herb salt
half to 1 cup Mary-Ann's Olive oil

Place red peppers, salt, lemon juice in blender and blend until really smooth and creamy, then slowly add the oil through the li while you keep blending

serve on anything

Red Bean dip
500g (1 pound) organic red kidney beans (order from www.naturalway.co.za - much nicer tasting and quarter the price  of tinned beans)
Soak over night, rinse, place in pot with Mary-Anns vegetable stock, then bring to boil and simmer until soft - about an hour

Place in blender with the following
1 fresh cleaned bel pepper
1 tsp Mary-Ann's Garlic & Herb salt
half cup Mary-Ann's extra virgin oil

Place on table and eat with salad ingredients like raw cucumber slices and drizzle with red pepper mayonnaise and if you want to explode your taste buds and make some chili pesto - see below.

Combine these 2 or three and spread on polenta slices with fresh avocado and tomato slices, quick easy and nutritious

Red Beans are high in a particular type of fiber that has an extremely stabilizing effect on blood sugar - so is very satisfying, contains a good protein source which is easier to digest than meat and soaking the beans overnight and then cooking them allows a particular glucose (rafinnose and stachyose) molecule to break down and not result in gas. eating beans regularly also allows your intestines to adjust and within a few days the gas stops.

Chili Pesto
1 full handfull/bunch fresh cilantro (coriander/dhania)
5 medium strength chilis
1 red bel pepper - clean and in chunks
1 cup extra virgin olive oil
1-2 tsp Mary-Ann's Garlic & Herb salt
1 tsp ground cumin
Blend well and serve on anything requiring a bite
