Recently been enjoying an interesting combination Red Pepper mayonaise with Bean dip, served with salad and grilled polenta slices
These two meal "add-ons" are not only delicious but extremely nutritious
Red Pepper mayonaise is an excellent source of beta carotene and essential fatty acids, vitamin C, calcium and fibre
2 Red peppers cleaned and cut into largish pieces and either grilled or simmer gently in a pot with a lid over low temperature. Add NO water or oil - the natural juices just come out.
juice of 1 medium lemon 1-2 tsp Mary-Anns Garlic & Herb salt half to 1 cup Mary-Ann's Olive oil
Place red peppers, salt, lemon juice in blender and blend until really smooth and creamy, then slowly add the oil through the li while you keep blending
serve on anything
Red Bean dip 500g (1 pound) organic red kidney beans (order from www.naturalway.co.za - much nicer tasting and quarter the price of tinned beans) Soak over night, rinse, place in pot with
Mary-Anns vegetable stock, then bring to boil and simmer until soft - about an hour
Place in blender with the following 1 fresh cleaned bel pepper 1 tsp Mary-Ann's Garlic & Herb salt half cup Mary-Ann's extra virgin oil
Place on table and eat with salad ingredients like raw cucumber slices and drizzle with red pepper mayonnaise and if you want to explode your taste buds and make some chili pesto - see below.

Red Beans are high in a particular type of fiber that has an extremely stabilizing effect on blood sugar - so is very satisfying, contains a good protein source which is easier to digest than meat and soaking the beans overnight and then cooking them allows a particular glucose (rafinnose and stachyose) molecule to break down and not result in gas. eating beans regularly also allows your intestines to adjust and within a few days the gas stops.
